If you miss having brunch with your friends or just ordering a nice stack of pancakes, then check out this recipe.
2 tbsp vegetable or corn oil (save one 1 tbsp for frying and use 1 tbsp for the batter)
1 tbsp baking powder
1 cup of all purpose flour
1 cup of coconut milk or semi skimmed milk
Prep time: 5 minutes Cooking time: 10 minutes Serves: 2
Step. 1: Add all of the ingredients into a large bowl and whisk well.
Step. 2: On a medium to high heat, heat 1 tbsp of vegetable oil in a small frying pan. Let it fry on one side for 2-3 minutes before flipping on the other side. Use a spatula to flatten it in order for it to cook evenly throughout.
Tip: You can serve it with honey and frozen berries, or chocolate spread with crumbled biscuits and banana. Sugar was not used in the recipe for the batter, because the toppings will bring a natural sweetness to the pancakes.
