Now that it is Autumn, it is the perfect season for light stews. This is a budget friendly, healthy, vegan chickpea stew that you will fall in love with.

Ingredients:
1 medium sized yellow onion
3 garlic cloves
1 tbsp olive oil
1 vegetable stock cube
200g dried chickpeas (soaked overnight or for 8 hours in water)
A small handful of fresh parsley chopped finely
1 tsp dried thyme
2 Bay leaves
1 lemon
1 large carrot
4 cups of water
Salt
Pepper
Prep time: 10 minutes
Cooking time: 60 minutes
Serves: 4-6 people
Method:
Step. 1: Heat the oil in a large pot and add chopped onion and garlic to the pot. Saute for 2 minutes.
Step. 2: Drain and wash the chickpeas and add to the pot. Add the chopped carrots and stir everything together.
Step. 3: Add the parsley, bay leaves, dried thyme, vegetable stock, salt, pepper and water into the pot. Squeeze the lemon juice into the pot too. Cover with lid and let it simmer for an hour on a low to medium heat. Stir occasionally.
Tip: You can check if the chickpeas are ready by tasting them. The water will simmer down and that is a sign of the stew being ready.
