Recipe Of The Day: Lentil Stew

Here is a quick, cheap and delicious recipe to make.

200g of dried lentils

4 ripe tomatoes

2 tbsps tomato puree

2 Bay leaves

1 handful of fresh parsley

1 cup of frozen or fresh spinach



1 tsp of ground cumin

1 vegetable stock

2-3 glasses of water

2 tbsp of olive oil

Prep time: 5 minutes

Cooking time: 1 hour

Serves: 6


Step.1: On a medium heat, put 1 tbsp of olive oil in a large pot. Add the lentils and let it cook for 1 minute.

Step.2: Wash and chop the tomatoes and add them to the pot. Wash the spinach, add it to the pot too.

Step.3: Cut the parsley finely and add it to the pot along with the tomato puree, 2 glasses of water, the vegetable stock, pepper, salt, bay leaves and cumin. Drizzle some olive oil too and then cover with a lid. Let it simmer on a low to medium heat and stir occasionally.

Tip: You can add Feta cheese as a topping when serving.
