Baked cauliflower cheese is a classic British dish that is usually served as a side dish of a Sunday roast, or it can be served as a main dish.

Ingredients:
1 medium sized cauliflower
800ml of semi skimmed milk or vegan milk
1 cup of all purpose flour
150g of butter (at room temperature)
500g sharp cheddar cheese or any strong cheese grated
Salt
Pepper
Prep time: 5 minutes
Cooking time: 35 – 40 minutes

Method:
Step. 1: Cut the cauliflower into small florets and remove the stem and leaves. Boil it until it is tender. Then drain and leave to cool. Meanwhile, heat the oven 180 degrees.
Step. 2: In a large pot on a medium heat, melt the butter and add the flour at the same time. Whisk them together until it forms into a roux. Then add the milk and keep on whisking until it forms into a thick sauce. Take it off the heat.
Step. 3: Add the grated cheese and cauliflower into the sauce and then season with salt and pepper. Transfer the sauce into a deep dish baking tray and put it into the oven. You’ll know it’s ready once the top has a nice golden colour to it.
