It’s a healthy vegan stew that is really easy to make.
250 grams of black eyed peas
2 cups of mixed frozen vegetables
1 vegetable stock cube
2 Bay leaves
1 tbsp dried rosemary
2 tbsp olive oil
150 grams of passata
3-4 cups of water
Tip: soak the beans 8 hours before you cook them.
Prep time: 5 minutes
Cooking time: 1 hour
Step. 1: Put 1 tbsp of olive oil in a pot and heat it up on a low to medium heat. Add the frozen vegetables and let it cook for 5 minutes.
Step. 2: Wash and drain the beans under cold water and add them to the pot. Add the rest of the olive oil, salt, pepper and herbs, along with the vegetable stock cube, passata and glasses of water in the pot. Let it all simmer on a low to medium heat for an hour.
