Recipe Of The Day: Black eyed bean stew

It’s healthy and easy to make.

Ingredients:

250 grams dried black eyed beans

2 small green bell peppers

1 large carrot

2 Bay leaves

1 tbsp dried rosemary

1 vegetable stock cube

1 lemon

3 tbsp olive oil

3 cloves of garlic

Salt

Pepper

Tip: You need to soak the beans 8 hours before in cold water before you use this recipe.

Prep time: 5 minutes

Cooking time: 1 hour

Serves: 4

Method:

Step.1: Put a little bit of olive oil in a large pot. Chop the garlic, peppers and carrot and put it in the large pot. Let it cook for 5 minutes.

Step. 2: Wash the soaked beans under cold water and add them to the pot. Add 3 – 4 cups of water, the vegetable stock, herbs and spices into the pot. Then drizzle with the remaining olive oil and squeeze the lemons in the pot. Let it simmer on a low heat for 1 hour. Enjoy!
