Warm up your belly with this healthy, delicious soup.
2 chicken thighs with drumsticks
3 cloves of garlic
2 tbsp dried basil
6 button mushrooms
1 large carrot
1 vegetable stock cube
1 tsp olive oil
Prep time: 15 minutes
Cooking time: 1 hour
Step.1: Boil the chicken in a pot on high heat for 25 – 30 minutes, or until it is cooked all the way through. Leave to the side to cool.
Step. 2: In a large pot add the olive oil, chopped garlic, mushrooms, tomatoes and carrots together and stir for 5 minutes.
Step. 3:Add the stock cube, dried basil, pepper into the pot, then fill it with enough water that reaches just a little bit below the tomatoes. Cover to boil for 30 – 35 minutes on a medium heat.
Step. 4: Once the tomatoes are cooked, take it off the stove and use a hand blender to blend until smooth or slightly chunky. Cut the chicken thighs as shredded pieces and add it into the pot. Cook for a further 10 minutes, then it is ready.
