4 large potatoes
1 handful of chopped fresh parsley
3 streaks of turkey bacon
100g of mushrooms
2 cloves of garlic
1 tbsp paprika
1 small jar of mayonaise
1 tsp olive oil
Prep time: 10 minutes
Cooking time: 30 minutes
Step. 1: Dice the potatoes in medium sized chunks and boil them for 20 minutes.
Step. 2: Heat the olive oil in a medium sized frying pan on a low – medium heat. Dice the mushrooms, turkey bacon and garlic. Add to the frying pan and saute for 5 – 7 minutes.
Step. 3: Boil the eggs for 8 minutes and then put them in cold water for another 5 minutes. Once they have cooled, gently peel the shells, cut them in half and leave them to the side.
Step. 4: Once the potatoes have softened, drain them and add them back in the pot. Add the parsley, mayonnaise, turkey bacon, mushrooms, garlic, eggs, paprika, salt and pepper into the pot and mix well.
