This recipe is super easy to make. The soup is light, filled with vitamin C and can help warm you up in this cold weather.
6 – 7 tomatoes
2 tbsp dried basil
1 tbsp olive oil
5 cups of water with 1 cube of vegetable stock
2 tsp salt
1 medium sized onion
Prep time: 5 minutes
Cooking time: 40 minutes
Step.1: Cut the onion into small pieces. Then cut the tomatoes into wedges.
Step. 2: Heat the olive oil in a pot on a medium – low heat. Add the onions, tomatoes, dried basil, salt and water with stock cube. Put a lid on it and let it simmer for 30 – 35 minutes.
Step. 3: You can tell that it has simmered by checking if the tomatoes have softened completely. Once they have, use a blender or a stick blender to blend and create a smooth texture.
Tip: If you want a chunky texture, don’t blend until smooth.
