This is an easy midweek meal to make. It’s delicious, simple and healthy.
Spanakorizo translates to Spinach rice and it is a Greek dish that is cooked as vegetarian comfort food.

Prep time: 10 minutes
Cooking time: 30 minutes
Serves 4
Ingredients:
150g risotto rice
150g frozen or fresh Spinach
1 cube of vegetable stock
3-4 cups of water
1 tsp dried thyme
1 tsp pepper
1 large lemon
1 large yellow onion
3 cloves of garlic
1 tsp olive oil
Method:
Step. 1: Heat the olive oil in a large pot on a medium heat. Add the chopped onion and garlic. Let it cook for 5 minutes until fragrant.
Step. 2: Add the rice, Spinach, vegetable stock and water into the pot. Add the pepper and thyme and grate some of the skin of the lemon.
Step. 3: Let the food simmer for 20 minutes and stir occasionally. Add the lemon juice from the lemon towards the end and keep on stirring.
Step. 4: Once the water is absorbed and the rice has expanded, keep on stirring fast in order to absorb any excess water. Once it has thickened like a risotto it is ready.
Tip: If you add feta cheese on top it compliments the spanakorizo.
