Recipe: Easy Butternut Squash and Spinach Curry

This is an easy yet delicious recipe for both lunch and dinner.

Ingredients:

1 can of coconut cream

1 can of chopped tomatoes

500g of diced butternut squash

250g of frozen Spinach defrosted

1 tsp turmeric

1 tsp cumin

1 tsp dried thyme

1 tsp dried rosemary

Salt

Pepper

1 tsp olive oil

Prep time: 5 minutes

Cooking time:50 minutes

Serves: 4-5 people

Method:

Step. 1: Drizzle the olive oil in a large pot on a low-medium heat. Add the butternut squash.

Step. 2: Add the frozen spinach and stir. Then add all the herbs and spices, along with the coconut cream and chopped tomatoes and stir.

Step. 3: Put a lid on the pot and let it simmer for 50 minutes on a low-medium heat. Once it is ready turn the heat off and let it cool.
