Here’s a cheap and easy recipe to make during the week.
2 skinless chicken breast diced
1 large spring onion chopped in small pieces
1 tinned mushrooms
2 cups of short grain rice
1 tsp soy sauce
1 tsp sunflower oil
Pinch of black pepper powder
Prep time: 25 minutes
Cooking time: 30 minutes
Serves: 4 people
Step. 1: Boil the rice according to the instructions on the packet. Once the rice is boiled, keep it cool to the side.
Step. 2: Heat the wok or a deep frying pan on a medium-high heat. Add the tsp of sunflower oil.
Step. 3: Add the sliced chicken and mushrooms into the pan. Let them cook for 5-7 minutes.
Step. 4: Add the spring onions, pepper and the boiled rice to the pan. Make sure that you mix everything well together. Add the soy sauce and continue to stir fry.
Step. 5: Crack the 2 eggs and add to the pan directly. Continue to stir fry until the egg has mixed with the ingredients. Let it cook for 5 minutes.
