This is a simple yet delicious vegan recipe, but it only becomes vegetarian if you top it with Feta cheese.
2 cups of frozen peas (defrosted)
2 fresh carrots chopped into small chunky pieces
2 medium sized potatoes peeled and chopped
1 medium sized onion
A handful of fresh or dried dill
1 carton of passata
2 Tbsp olive oil
Half a cup of water
Optional: Feta cheese as a topping
Prep time: 10 minutes
Cooking time: 50-60 minutes
Serves: 6 people
Step. 1: Drizzle some olive oil in a large sauce pan on a low heat. Chop the onion into small pieces and add it to the saucepan along with the peas. Stir and let it cook for 5 minutes.
Step. 2: Add the potatoes, carrots, dill, passata, water and the rest of the olive oil into the pan. Season with salt and pepper and stir. Let it simmer on a low heat, stirring occasionally.
Tip: You will notice that once the sauce becomes a dark orange colour and the potatoes have softened, it is then ready.
