This pasta dish is absolutely delicious and effortless to make in just 3 easy steps.
Serves: 4 Prep time: 10 minutes Cooking time: 30 minutes
½ a packet of Fusilli pasta
½ a jar of sun-dried tomatoes (chopped)
2 cloves of garlic (chopped)
1 tin of plum tomatoes
1 500G carton of Passata
2 tbsp of low-fat Greek yogurt
a pinch of dried oregano
a pinch of pepper
a pinch of sweet paprika
1 vegetable stock cube
1 tsp sun-dried tomato oil (from the jar)
Grated Parmesan cheese for sprinkling on top
Step 1. Boil the pasta in a pot and let it cook for 12-13 minutes, then drain the water from the pot. Heat the sun-dried tomato oil in a pan, then add the chopped garlic and sun dried tomatoes.
Step 2. Add the tin of plum tomatoes and Passata, along with the pepper, paprika, vegetable stock cube and oregano. Let it simmer for 15 minutes on a low heat.
Step 3. Add the low-fat Greek Yogurt to the sauce and let it simmer for another 10 minutes, until it turns into an orange colour. Once it is ready, mix it with the pasta and let it settle for 5 minutes. When ready to serve, add the Parmesan cheese on top.
