Spice up your breakfast with the taste of the Middle East.

This delicious dish is originated from Tunisia, yet it is eaten all over the Middle East. Not only is it simple to make, but it is also very healthy for you.
Serves: 4 Prep time: 10 minutes Cooking time: 15-20 minutes
Ingredients:
1 small onion chopped
1 red or green pepper chopped and de-seeded
1 green or red chilli chopped and de-seeded
1 can chopped tomatoes
1 garlic clove minced
4 eggs
1 tsp paprika
1-2 tsp sugar
1 tsp cumin
3 tsp tomato paste
Salt and pepper to taste
1 bunch parsley
1 tsp cayenne pepper (add more if you want it spicy)
1 tbsp Olive oil
Method:
Step.1. Heat the olive oil in the skillet pan on a medium heat.Add the onions and let them cook until they have softened. Then add the garlic and let it all sauté until it is fragrant.
Step.2. Add the peppers and chilli and let is cook for 5-7 minutes until they have softened. Then add the tomato paste and chopped tomatoes, along with the spices and sugar. Add salt and pepper to taste. Let it simmer for 5-10 minutes until the liquid have reduced.
Step.3. Crack the eggs slowly and carefully on top of the tomato sauce. Make sure there is enough room and separation between each egg. Cover the pan and let it cook for 10-15 minutes, or until the eggs have poached. Once it is ready, sprinkle the parsley on top as garnish and serve alongside with crusty bread or warm pitta bread.
