Fish is always good for you, so here’s a healthy and quick recipe that you can whip up any time of the week.
2 fillets of smoked Basa fish
4 large potatoes
1 bunch of fresh dill
1 tbsp dried oregano
3 tbsp olive oil
3 cloves of garlic
Salt and pepper to taste
Recipe: Serves 2 – Prep time: 5 minutes Cooking time: 35 minutes
Step 1. Wash and peel the potatoes and cut into small chunks, then cut the washed tomatoes into small chunks and throw them all into a roasting tin. Then chop the garlic into small pieces and throw it into the roasting tin. Preheat the oven to 180 degrees.
Step 2. Place the fish fillets on top of the rest of the ingredients in the roasting tin. Chop up the bunch of dill and scatter it all over the ingredients and fish. Generously drizzle the Olive oil on top of everything and lightly season with the oregano, pepper and salt. Place it in the oven for 15 minutes.
Step 3. Cut the lime in half and once 15 minutes has gone by, take the roasting tin out of the oven. Place the lime in the roasting tin and flip over the potatoes, so the other side can be cooked properly. Place it back in the oven and leave it in for 15 more minutes.
Step 4. You will know that it is ready by lightly poking the potatoes with a fork. If it is soft and mushy inside, then the potatoes are ready. If the fish fillets need more time to cook, place it in the oven for 5 more minutes. Once it is ready, serve yourself a plate and enjoy.
